What is kombucha?

Kombucha is a fizzy, fermented drink made with tea, sugar, bacteria, and yeast.

How do we make our booch?

We first ferment sweetened black tea with a SCOBY for about 7-10 days. During this fermentation process, the SCOBY breaks down the sugar in the tea, making it slightly carbonated and acidic. Once the first fermentation is complete, the tea is flavored with others teas and fruits and is fermented again for another 3-4 days. The end result is our booch! ☺️

What is a SCOBY?

SCOBY stands for symbiotic culture of bacteria and yeast and is the mother of our booches. It is an ✨essential✨ component of our brewing process.

How do we flavor our booch and what ingredients do we use?

Our favorite way to flavor is combining flavored teas and fresh fruits. We find that the fruits give us a good amount of sugar that helps with the fermentation process, while the teas are a great way to boost the fruit flavor!

What are the benefits of drinking kombucha?

Like all fermented foods, kombucha is a great source of probiotics, a type of beneficial bacteria in your gut with many positive health effects. It’s also a good source of antioxidants!

How much kombucha can you drink daily?

We recommend 4-6 oz for daily consumption. But we usually drink about 12 oz a day 🤫

What’s at the bottom of my bottle?

We like to call them our yeastie boys! That’s just the residual good bacteria of the SCOBY. Our yeastie boys are a good sign that our booch is a healthy kombucha brew!

It’s totally safe to drink and a good way to get an extra boost of probiotics👍🏼 If you don’t like it, you can always strain it out!

What is the best way to enjoy our kombucha?

We recommend shaking up the bottle before opening so the yeastie boys at the bottom are well incorporated. Then enjoy!! 🥳

*Some of our booches are extra fizzy, so be careful when opening after shaking, it may explode!

Do you need to refrigerate kombucha?

Yes! Our booches like to chill in the fridge. Since there are live cultures in our booch, it will continue to ferment if left outside.

How long does kombucha last?

For best quality, we recommend drinking within a few days after opening. (It may lose carbonation after opening.) We’ve had our booch in our fridge for months and was still good to drink. Since kombucha is a fermented drink, it will still continue to slowly ferment in the fridge. The longer it stays in the fridge, the more sour it may become.

But our booch is so good, it won’t last for too long 😉

The two booches

Hi! We’re Amy and Colleen and we are the brewers behind booch & roo, a quarantine hobby that quickly turned into a little side hustle!

Our origin story: During quarantine, we spent a lot of time chilling on our hammock, the Roo, while sipping on our fav booch. We called this our “Booch and Roo” time. It was during this time that we decided to start making our own booch. We fell in love with the process and coming up with new flavors that we wanted to share it with everyone!

The pandemic has turned life upside down, giving us a new lens on how we view life and the world. We realized human connection is something we should never take for granted. When so many people were isolated, we were lucky enough to spend time together. Our “Booch and Roo” hangouts were times we truly cherished and will always be grateful for. We hope that through our booch, you can also create your own version of “Booch and Roo”.
