Jake and I love to create recognizable, relatable food. Eating is something we all have the joy of experiencing, why not make it memorable :)

A little bit about our business……

After spending years in the industry becoming experts at our craft, we started asking ourselves ‘Will there ever be a time to take our career into our own hands and cook what we want to cook?’ With that hope Crisp was born.

We started in a tent at The Boise Farmer’s Market in July of 2017 and after the first year decided to build the truck. We dream of a brick and mortar if the circumstances were right❤️❤️❤️

A little bit about our food…..

We classify ourselves as globally inspired - we love all genres of food! From our Pork Belly Tacos to our Hot Pastrami we love to keep it fresh 😎😎

Quality is only one piece of the dining experience though, ease of eating, flavors, and temperature are all minor details we try to pay special attention to.

These Hearty, Heavy classics are sure to fill your belly and warm your soul

  1. Beef Stroganoff

    Beef Stroganoff

    Braised Shortrib, mushrooms, porcini cream, ziti, sourcream, parsley

  2. Hot Pastrami

    Hot Pastrami

    Shaved Pastrami, stoneground mustard, and pepperjack cheese come together on thick sliced marble rye. Garnished with pickle, olive, and fruit.

  3. Halloumi Poutine

    Halloumi Poutine

    Pulled Pork, red wine gravy, halloumi cheese, and cotija over fries

  4. Mac and cheese

    Mac and cheese

    We mix it up every now and again but here are a couple variations we do:

    Emmentaler Mac - Swiss cheese sauce with pickled onions, and parsley

    Classic Mac - cheddar sauce

    Steak chili Mac - Tri tip steak chili, Gouda cream sauce, andouille, cotija, chipotle mayo

  5. Schnitzel Sandwich

    Breaded fried pork loin, arugula, tomato, red onion, Swiss, stoneground mustard, on acme ciabatta

  6. Chicken and Dumplings

    Our chicken and dumplings consists of Creamy Chicken and vegetable broth, gnocchi, bacon, corn, and parsley

  7. Pork Belly Tacos

    Pork Belly Tacos

    Ok….let’s be serious, there’s no wrong time for pork belly tacos!

    We braise whole pork belly with warm spices and chili flake. After the Belly is cool we cut into slices which we then sear on the flat top grill. Tacos are assembled with corn tortillas, shredded cabbage, pickled onions, sriracha mayo and gluten free Asian glaze.

It’s always great to have some down time to review your accomplishments and map out what you can improve or change.

We are extremely grateful for the continued support from our customers and the Farmers Market. We could never have gotten this far without your enthusiasm for food!

We have been dabbling in middle eastern cooking, smoking various proteins, and fish cookery. We are excited to share some great food with you this year. As always we plan on seasonal exclusivity and creatively curated dishes. We will most likely always have the Birria Quesadilla but Tacos, Coconut Curry, and Burgers will be on a rotating cycle. There will be many great dishes to try :)
