One Pan Lemon Chicken with Kalamata Olives & Artichokes

🍋𝗢𝗻𝗲 𝗣𝗮𝗻 𝐋𝐞𝐦𝗼𝗻 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝘄𝗶𝘁𝗵 𝗔𝗿𝘁𝗶𝗰𝗵𝗼𝗸𝗲𝘀 & 𝗞𝗮𝗹𝗮𝗺𝗮𝘁𝗮 𝗢𝗹𝗶𝘃𝗲𝘀🍋

•Servings 6
Ingredients:
3 Large Chicken Breasts
2 Cans Artichoke Hearts
1/4 c Kalamata Olives
3 Lemons
1/4 C Extra Virgin Olive Oil
Garlic
1.5 T Oregano
Salt
Pepper

Directions:
Preheat oven to 350 degrees.

Slice chicken breasts lengthwise to make thinner. Season both sides with salt & pepper. Heat a frying pan with a small amount of olive oil and brown both sides of chicken breasts.

Lay chicken on foil covered sheet pan. Layer 2 sliced lemons, artichokes, and sliced red onion on top of chicken.

Mix together the olive oil, juice from 1 lemon, oregano, garlic (chop and measure it with your heart), salt, & pepper. Pour over chicken.

Bake for around 25 minutes (when juices are clear). Add Kalamata Olives and bake for 5 minutes longer.

Enjoy!

We serve it alongside asparagus (or steak snakes, like my kids like to call them)!

Quick, easy, and absolutely delicious!

Oriental Chicken Salad with Spicy Sesame Soy Dressing

🥗𝗢𝗿𝗶𝗲𝗻𝘁𝗮𝗹 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗦𝗮𝗹𝗮𝗱 𝘄𝗶𝘁𝗵 𝗦𝗽𝗶𝗰𝘆 𝗦𝗲𝘀𝗮𝗺𝗲 𝗦𝗼𝘆 𝗗𝗿𝗲𝘀𝘀𝗶𝗻𝗴

Ingredients:

Lettuce
Cabbage
Carrots
Grilled Chicken
Sesame Oil
Rice Vinegar
Hot Oil
Soy Sauce
Honey
Salt/Pepper

Directions:

I don’t measure lettuce, cabbage, & carrots! I dump them in a large individual salad bowl and roll with it! Add 1 diced, grilled chicken breast (I prep these for the week so they’re easily accessible throughout the week).

For the dressing - mix together 1 tsp sesame oil, 1 tsp hot oil, 2 T rice vinegar, 1 tsp honey, salt & pepper to taste. Whisk well. Drizzle over salad!

BBQ Ground Turkey, Corn, & Black Bean Stuffed Zucchini Boats

🌽𝗕𝗕𝗤 𝗚𝗿𝗼𝘂𝗻𝗱 𝗧𝘂𝗿𝗸𝗲𝘆, 𝗖𝗼𝗿𝗻, & 𝗕𝗹𝗮𝗰𝗸 𝗕𝗲𝗮𝗻 𝗦𝘁𝘂𝗳𝗳𝗲𝗱 𝗭𝘂𝗰𝗰𝗵𝗶𝗻𝗶 𝗕𝗼𝗮𝘁𝘀

Ingredients:
2 lbs lean ground Turkey
6 zucchini
1 can of corn - drained
1 can of black beans - rinsed & drained
2 T + more for drizzling of BBQ Sauce of choice
Shredded Cheese

Instructions:
Preheat oven to 350 degrees. Line baking sheet with foil & spray with cooking spray.

Brown ground Turkey. Cut zucchini’s on half, length wise, and gently scoop out the insides. Chop up the inside of the zucchini that you scooped out and add it to the ground Turkey. Line zucchini’s on your pan and sprinkle with salt & pepper.

Add the black beans & corn to the ground Turkey & zucchini mixture. Add 2 T of BBQ sauce and stir well.

Fill zucchini boats with the mixture (there will be extra), drizzle with a little more BBQ sauce, sprinkle the tops lightly with shredded cheddar, and bake for 20-30 minutes until zucchini is tender!

The extra filling can be used for lettuce wraps the next day for lunch or even a Mexican quesadilla!

Pesto Chicken Meatball Soup

Pesto Chicken Meatball Soup

Ingredients:

Meatballs:
•1¼ Lb ground chicken
•½ C panko breadcrumbs
•1/2 C parmesan Cheese
•1 large egg
•2 tablespoons dried parsley
•2 tablespoons prepared pesto
•½ teaspoon garlic powder
•1 teaspoon poultry seasoning

Parmesan Broth:
•1 tablespoon olive oil
•½ cup onions chopped
•Pinch of red pepper flakes
•6 cups chicken stock
•3 cups water
•2-3 rinds of parmesan
•1 cup Ditalini Pasta
•¼ cup prepared pesto
•1 ½ cups packed chopped spinach

Directions:

Preheat the oven to 400ºF. Line a baking sheet with aluminum foil and spray with cooking spray or use parchment.

In a bowl, using a fork, mix together all the ingredients for the meatball except the chicken. Then add the ground chicken and mix until *just* combined. Use a tablespoon of the meat mixture per meatball (you should get 28-35 meatballs.) Place on the prepared baking sheet roughly 1-inch apart and bake for 18-22 minutes or until the meatballs are cooked (or they reach an internal temp of 165ºF.)

While the meatballs bake, heat a large pot over medium heat. Add the onions and saute them for 5 minutes before adding the red pepper flakes. Pour in the chicken stock, water, and add the parmesan rinds. Allow the stock to simmer for 15 minutes.

Then add the pasta and cook according to package instructions. When the pasta is about 3 minutes from being done, add the pesto, greens, and meatballs back into the soup pot. Remove Parmesan rinds. Taste and adjust seasonings as desired. Serve warm topped with more parmesan if desired.

French Onion Soup

French Onion Soup

If I see this on any menu, I’m almost guaranteed to order it! It’s my absolute favorite! Now you can make it at home - super easy!

Ingredients:

•4 Sliced Yellow Onions
•4 T Salted Butter
•2 Tsp Garlic Salt
•1 Tsp Pepper
•32 Oz Beef Broth
•3 T Worcestershire Sauce
•Swiss Cheese (measure with your heart ❤️)
•Salt
•Homemade Croutons (could definitely use store bought or toasted crusty bread)

Directions:

Croutons:

Turn oven to 375. I used old bread, cubed it. Put your bread in a bowl, add olive oil and desired spices (I do salt, pepper, parsley, & garlic powder). Lay on a cookie sheet and bake until crispy!

Soup:

Heat butter over medium heat in large pot. Add sliced onions, cook until soft. Once soft add garlic powder & pepper.

Add broth & Worcestershire. Let simmer for as long as you can, I did a good 4 hours. Add salt if needed. It just makes the broth more flavorful!

Soup Assembly:

Add soup to an oven safe bowl. Top with croutons and cover everything with cheese. Broil until bubbly & browned!

My mouth is watering thinking of this soup again! 🤤

Chicken Parm Stuffed Zucchini Boats

Chicken Parm Stuffed Zucchini

Ingredients (serves 6):

•6 Zucchini
•1 Lb Ground Chicken
•1 Jar Fave Pasta Sauce (ours is @raoshomemade )
•2 C Mozzarella Cheese
•2 T Olive Oil
•1 C Italian Bread Crumbs
•Salt & Pepper

Directions:

Preheat oven to 375. Line a large baking dish with foil.

Cut zucchini in half lengthwise. Scoop out fillings, place on the side in a bowl. Place zucchini on baking sheet, brush with 1 T olive oil, and sprinkle with salt & pepper. Bake in oven for 15 minutes.

Meanwhile, brown ground Turkey. Add salt & pepper to taste (I do 1 tsp salt, 1/2 tsp pepper). Add in zucchini fillings. Cook until soft. Add your sauce.

Once zucchini is out of the oven, stuff all 12 sides with chicken mixture. Top with mozzarella cheese.

Mix together bread crumbs and remaining 1 T olive oil. Sprinkle on top. Bake for 10 more minutes, or until browning.

Enjoy!

Balsamic Roasted Chicken & Veggies

𝗕𝗮𝗹𝘀𝗮𝗺𝗶𝗰 𝗥𝗼𝗮𝘀𝘁𝗲𝗱 𝗖𝗵𝗶𝗰𝗸𝗲𝗻 & 𝗩𝗲𝗴𝗴𝗶𝗲𝘀

Ingredients for chicken marinade:
•Chicken Tenderloins
•1 T Sage
•1 T Rosemary, crushed
•6 Cloves of Grated Garlic
•Salt/Pepper
•3 T Olive Oil
•1/2 C Balsamic Vinegar

Veggies:
•Veggies of choice! I used onions, peppers, & mushrooms!
•1/4 C Balsamic Vinegar
•Salt
•Pepper
•Drizzle of Olive Oil

Directions:
Mix together chicken marinade, dump over raw tenderloin, cover with foil and put in fridge (I like to do this in the morning and marinade until dinner time).

Veggies:
About 1 hour before dinner, chop veggies and marinade in fridge.

Preheat oven to 375. Roast everything until done! When the chicken is done, I keep the veggies in and turn the broiler on for a few minutes to get a char!

If you LOVE balsamic vinegar, you’ll love this! Beware: when opening the oven after roasting, the vinegar will make your eyes water, haha!

Spicy Sausage Cheese Dip

𝗦𝗽𝗶𝗰𝘆 𝗦𝗮𝘂𝘀𝗮𝗴𝗲 𝗕𝗲𝗲𝗿 𝗖𝗵𝗲𝗲𝘀𝗲 𝗗𝗶𝗽

Ingredients:

•1 lb Spicy/Hot Italian Sausage
•4 C Shredded Cheddar Mix
•16 oz Onion & Chive Cream Cheese
•1 Diced Onion
•1 C Beer
•1 tsp Salt
•1/2 tsp Pepper
•1 tsp Garlic Powder
•1 tsp Onion Powder
•1/4 Tsp Crushed Red Pepper
•1 Tsp Yellow Mustard
•3 Green Onions, diced

Directions:

Preheat oven to 350.

Brown sausage & onion in pan. Add salt & pepper.

In a blender, add cream cheese, 2 cups of cheddar mix, mustard, beer, and all spices. Blend until creamy.

Butter a casserole dish. Add in the creamy mixture. Add in the last 2 cups of the cheese and the sausage/onion mix.

Mix well. Bake for 25-30 minutes. Top with green onion.

We used cubed Italian bread, pretzels, and Fritos to dunk!

Italian Sausage Stuffed Spaghetti Squash

𝗜𝘁𝗮𝗹𝗶𝗮𝗻 𝗦𝗮𝘂𝘀𝗮𝗴𝗲 𝗦𝘁𝘂𝗳𝗳𝗲𝗱 𝗦𝗽𝗮𝗴𝗵𝗲𝘁𝘁𝗶 𝗦𝗾𝘂𝗮𝘀𝗵

(8 servings)

1) 2 lbs Italian Sausage
2) 2 Green Peppers
3) 2 Spaghetti Squashes
4) 1 Jar Marinara Sauce
5) 1 Small Bag of Shredded Mozzarella Cheese

Preheat oven to 350. Place zucchini squash in microwave for 5 minutes, this softens it a bit so it’s easier to slice in half.

Slice squash in half lengthwise and scoop out seeds. Sprinkle with salt & pepper, drizzle with olive oil if wanted. Bake for 1 hour.

In the meantime, brown Italian sausage, drain excess fat. Add in the chopped green peppers and sauté until soft. Add in the jar of marinara sauce and let simmer until sauce thickens.

When squash is done roasting, shred insides and push the filling down. Fill each half with a quarter of the mixture, packing it in. Top each side with the mozzarella cheese. Broil on high until bubbly and browned.

Each half is more than enough for 2 people!

𝗧𝗵𝗲 𝗕𝗘𝗦𝗧, 𝗝𝗨𝗖𝗜𝗘𝗦𝗧 𝗕𝗔𝗞𝗘𝗗 𝗖𝗛𝗜𝗖𝗞𝗘𝗡 𝗕𝗥𝗘𝗔𝗦𝗧𝗦 𝗘𝗩𝗘𝗥

Ingredients:

•7-8 chicken breasts, boneless/skinless
•1-3 T Olive Oil
•3 T brown sugar
•2 tsp paprika
•2 tsp dried oregano
•1/2 tsp garlic powder
•1 tsp salt
•1 tsp pepper

Directions:

Preheat oven to 425.

Line pan with foil. Place chicken breasts on pan. Drizzle with olive oil and brush to coat. Sprinkle seasoning evenly between all breasts. Pat down seasoning. Bake for 20 minutes

Take out, cover lightly with tented foil, & let rest for 5 minutes.

My girls love this chicken! When I can’t think of anything else to make, these save my rear every time! Add a veggie for a side and dinner is done!

Copycat Portillo’s Salad

🥗Copycat Portillo’s Chopped Salad

Salad Ingredients:

•Chopped Iceberg (I use scissors to chop it up really good)
•Purple Cabbage, finely chopped
•Green Onions, Chopped
•Grape tomatoes, quartered
•Fresh Mozzarella ball, quartered
•Ditalini Pasta, cooked
•Bacon, Chopped

Dressing Ingredients (this makes A LOT of dressing, a little goes a long way):

•3/4 C Olive Oil
•6 T White Vinegar
•6 T Sugar
•1.5 T Salt
•Few dashes of Tabasco
•1 tsp pepper

Directions:
Mix salad ingredients together. I didn’t measure, I just tossed things in to my liking :)

Mix dressing together in blended bottle. Drizzle over salad. Keep dressing in fridge for the week! A little goes a long way!

I had this salad 2x this week and I’m craving it already again! 😍
