Favorite Creations

& Tips For When You Make Your Variation!

Here are my six favorite creations in the past year, and my tips on what to do and not do when making it for yourself!

#1 - Mirror Glaze

Tips -
1) Always make sure your Glaze is the right temperature! Between 90 to 110 degrees is what you're looking for!

2) When making your Glaze make sure you have your cake frosted and chilled or else the Glaze won't cover the cake properly.

#2 - Basic Muffins

Tips -
1) When mixing in your eggs, make sure it mixes completely with the butter and sugar (to avoid butter chunks in one muffin!)

2) If using fruit (fresh and/or frozen) make sure you don't overmix it or else your fruit (especially berries) will lose flavor.

#3 - Stained Glass Decoration

Tips -
1) When melting the candies of your choice make sure you bake for a short time as they won't take very long to melt.

2) Try to break the shards of candy into pieces around the size of your palm, too big or too small won't present well.

#4 - Chocolate Cake

Tips -
1) When baking chocolate cake (or any cake for that matter) make sure to poke it with a toothpick before taking it out of the oven.

2) When cutting the top of your cake for layering don't be afraid of getting your hands dirty! Place your hand on top of the cake, level your knife, and slice away! (In every cake I've cut chocolate cake seems to stick the most)

#5 - Macarons

Tips -
1) When folding in the sifted powdered sugar and almond flour do so lightly. If you fold in too hard or too much it will ruin the base.

2) An easy way to check your beaten egg white/sugar mixture is to try and flip the bowl upside down, if nothing falls out you're good to go!

Simple Scones

Tips -
1) With scones you always want to make sure your butter is cold. You shouldn't be able to squish your butter easily, it should be frigid and hard or else your scones will come out a buttery mess!

2) When mixing your butter and dry ingredients together take your time to really work down the butter. Your butter should be cut beforehand and when your done mixing it you should have pieces of butter close to the size of a marble!
