A little about me: I'm a 34 year old girl mom working full time from home while raising my daughter & running a small business from my phone📱

When I started this business, I didn't really need the extra income. We were financially stable and had been living debt free for several years. What I was really looking for was FREEDOM...something that corporate America always fails to provide. Working tirelessly well over 40 hours a week only to be rewarded with a few days off... days off you are given but frowned upon if you take them 🤦🏽‍♀️

I decided that I wasn't going to settle for someone else controlling every minute of my life... asking for permission to do the things I needed to do, to live life with my family or spend days debating whether it was more important to show up at work or take my child to a doctor's appointment. I knew somewhere out there, there had to be a balance between work and really living life.

For months I watched my friend earn an income from her couch, her car, at starbucks, at the mall and, after talking myself out of it a million times, I finally decided THIS was the breakthrough I needed!!! The answer had been right in front of me all along and I was just to busy knocking the opportunity to hear opportunity knocking! 💡

Quesadilla Benedict - 7g net carbs

For the Quesadilla:
•1 to 2 Xtreme Wellness High Fiber Tortillas
•3 slices of thinly sliced ham
•1/2 cup of shredded cheese
•1 egg
•Cookie cutter (or drinking glass)

For the Hollandaise Sauce:
•3 egg yolks
•1 tbsp dijon mustard
•Pinch of cayenne pepper
•1 tbsp lemon juice
•Salt and pepper to taste
•6 tbsp of melted (and very hot butter)
▪︎you can replace the dijon and cayenne pepper with a spicy mustard. I used Ghost Pepper Mustard from a local farmers market

-Set a pot of water to near boiling while you prepare your food
-Using cookie cutter or glass, cut 6 circles out of the tortillas and 6 circles out of the ham slices.
-Take 1 tortilla slice, add some shredded cheese, 1 slice of ham and cover with tortilla slice. Repeat until you have 3 mini quesadillas.
-Place on pan to grill - flip to brown both sides.
-Stack the quesadillas on your plate.
-Crack your egg into a small bowl (you'll want it to stay in tact so be careful)
-stir the water in the pot quickly to create a little vortex in the center. While the water is swirling, gently pour your egg into the water. Set a timer for 1.5 minutes - look at your bad self poaching an egg!
-Once egg us poached, place egg on top of your quesadillas stack
-Add egg yolks, lemon juice, mustard, cayenne pepper, salt and pepper to a bowl. Using hand held blender, blend all ingredients together. Take your hot butter and slowly pour into bowl, making sure to mix well to keep a creamy consistency. Continue to pour until sauce thickens and lightens up. You can also blend in small food processor or mini blender.
-Pour hollandaise sauce over your quesadillas stacker
