No-Knead Overnight Artisan Bread

Our review: ★★★★★
Easy-peasy to make. Consumed it quickly. Will be making it again.

Changes we made:
We don’t own a dutch oven. We used a regular bread pan and covered it with tinfoil. We also added more water to the initial recipe because the dough seemed dry. We used 1c bread flour (because that’s what we had) and 2c all purpose.

Sweet Potato Gnocchi with Roasted Tomatoes

Our review: ★★★★☆
Tasty little jiggers. They were sticky and a little time-consuming to make, but fun. This was our first attempt making gnocchi and we’ll definitely be trying again.

Changes we made:
We used baked sweet potato we already had in the fridge and warmed it in the microwave. We didn’t bother making the traditional fork marks to shape the gnocchi because our dough was sticky. We added extra parmesan cheese and garlic. Skipped the pine nuts and topped with cilantro.

Mediterranean Stuffed Peppers

Our review: ★★★☆☆
The filling was bland, but we see potential. We’ll make them again and add more seasoning. Arguably we skipped out on the broth which may have helped.

Changes we made:
We baked the peppers in the oven before assembling. We did not add the chicken broth. We added cheese. We did not cover the dish in the oven. We served with hot sauce and sourcream.

Greek Kebabs and Mediterranean Potatoes

Our review: ★★★★★
Oven roasted kebabs and potatoes, the only way they could have been upgraded was if we had a  good ole bbq.

Kebabs: we put a Mediterranean spice mix on the chicken
Greek Potato Wedges  (we didn’t make our own tzatziki)

Quick, easy, tasty, and student and toddler friendly (if both consume vegetables).

Toss naan bread or pitas into the oven, pull out when crispy. Slather on a layer of tzatziki and top with veggies and parmesan.

Mediterranean Baked Sweet Potatoes

Our review: ★★★☆☆
Tasty, not so much as leftovers. Recipe made a lot of extra chickpeas. 2/3 of us found the sauce to be a little too garlicy. Would make again.

Changes we made:
Pretty sure we didn’t really follow the recipe for the sauce. Maybe that’s why the garlic was a little overkill...
