Miyabi 8” birch
This is a gorgeous addition to any knife collection. Micro particle sg2 super steel honbazuke sharpened to 9.5 degree edge, this has been the sharpest knife I have ever used and by far one of the sharpest looking. 67 layer Damascus pattern adorned with a unique grain birch wood that is truly gorgeous and cool to the touch.
Shun classic blonde 8”
My Shun knife is the workhorse of my collection! With 69 layer vgmax Damascus sharpened to a 16 degree bevel. This blade uses the best steel Japan has to offer and uses German engineering to deliver one the most well respected knives in the industry!
Mercer mx3 9.5”
My boss had one of these, I always used it over my knives. With 3 layers of steel this knife has a VG10 core laminated with HRC 60-62 stainless steel. This provides a easily sharpened blade that is extremely durable. Sharpened to 14 degree angles this knife slides right through anything you throw at it.
Ikon Blackwood 8”

This high tech work of art is adorned with a Carbon fiber handle design for ergonomic comfort second to none on this list. Hand sharpened to 8-12 degrees the bd1n-Vx American steel is extremely moisture, hot/cold and impact resistant. All this topped by the sexy Nova Prime lamination on the blade.
