Pour Over Coffee
One of the simplest of all coffee drinks? Pour over coffee! The glass Chemex looks like a science beaker, but it makes the perfect cup of black coffee. It will take your coffee game to the next level. Here's the equipment you need to make the perfect cup of pour over.
What's pour over coffee?
Pour over coffee is drip coffee made by pouring water over coffee grounds in a filter. Drip coffee is made using a percolator coffee machine, whereas pour over is made by a human. Controlling the pouring over the water helps to bring out the nuances in the flavor of the coffee beans.
How to make pour over coffee
1.Heat filtered water to 200 to 205 degrees. The flavor of filtered water is best
2.Weigh out and grind your coffee. Use a food scale to weigh out the amount of coffee. For 2 cups of coffee, we use 34 grams. Grind it out to a medium coarse grind. Light roast or medium roast beans are best for pour over coffee, which makes the flavors truly shine.
3.Add the Chemex filter and coffee, and let it bloom. Next you’ll wet the Chemex coffee filter, then add the coffee and let the it bloom for 1 minute by wetting the grounds and letting it sit. The bloom releases CO2 from the coffee and causes the grinds to rise.
4.Add the rest of the water. Then add the remaining water to make your pour over coffee! Our ratio is for every 1 gram of coffee, use 15 to 16 grams of water. So for 34 grams of coffee, we use 520 grams of water.
And that's it! Once you practiced a few times, it will feel like second nature.
French Press Coffee
The French press is one of the easiest, most inexpensive ways to brew a great cup of coffee. It’s a forgiving method that works for all sorts of coffee beans and roasts, and you don’t need lots of extra equipment. It’s the ideal tool for your morning coffee ritual!
What is French press coffee?
The French press is a small pitcher with a plunger that’s used to brew coffee and other drinks. It’s most often used for brewed coffee, but the French press also makes tea, cold brew, espresso, and more.
Ingredients and tools to get started
°French press coffee maker: The Bodum brand has been making this coffee tool since the 1940’s. We use this Bodum 34-ounce (1 liter) French Press.
°Coffee of any roast: You can use light, medium, or dark roast coffee here and get a great cup with any of them.
°Filtered water (optional): Filtered water has the best flavor for coffee: we use this filter pitcher. But it’s not required here.
°Coffee grinder: You’ll want a medium grind here, and you can use any type of coffee grinder. An electric burr grinder is most consistent, but not required for the French press like it is for pour over.
°Food scale (optional): You can use a digital food scale to weigh out the coffee and water, or just use the ratio of 1 cup grounds to 4 cups water.
°Electric kettle (optional): To easily measure temperature of water, you can use an electric kettle. (It also works for tea, matcha, and lots of other drinks.)
How to make French press coffee
1.Grind the coffee: Grind 70 grams (1 cup) coffee beans to a medium grind. The size of grind is important: if it’s too fine it can create sediment; if it’s too coarse it’s not flavorful enough.
2.Heat the water: Heat 4 cups water to hot but not boiling (200 to 205 degrees Fahrenheit) using an electric kettle, or bring it to a boil on the stovetop and then let it sit for 1 minute to decrease in temperature.
3.Add coffee grounds: Add the coffee grounds to the bottom of the pot.
4.Let coffee bloom for 1 minute: Add hot water to the height of the coffee and stir with a spoon. Set a timer and wait for 1 minute.
5.Add water and brew 4 minutes: Fill the French press to the top (just below the spout) and stir again. Set a timer and wait for 4 minutes.
6.Plunge: Place the lid on the French press and slowly press the plunger all the way down. Serve immediately. (Tip: If the plunger is hard to press, use a more coarse grind of coffee the next time. If it presses very easily, make the coffee grounds a bit finer.)
Cappuccino
The Cappuccino is one of the most famous of all coffee drinks, with that perfect combination of steamed milk, espresso and frothy foam. Guess what? You can make a barista-quality cappuccino at home that tastes like it’s straight out of an Italian café.
What's a cappuccino?
A cappuccino is an espresso drink with steamed milk, milk foam and espresso. It has equal parts espresso, steamed milk and foam (⅓ each).
How to make a cappuccino at home!
1.Make the espresso using an espresso machine, espresso maker, or Aeropress (see above).
2.Steam the milk (espresso machine method): Use the notes in the section above to steam the milk and get it nice and foamy.
3.OR, heat the milk on the stovetop then froth it. A temperature of 150 degrees Fahrenheit is perfect: that’s where the milk is hot to the touch but not simmering. Then froth using your desired method to froth the milk until it’s very foamy. For a cappuccino you’ll want a good amount of froth: you’re going for ⅓ espresso, ⅓ steamed milk and ⅓ foam.
4.Serve. Pour the frothed milk into the espresso and serve! It’s nice to use a latte cup, which holds the perfect amount.
