Curry Meatball Recipe

One of our favorite meals

Ingredients:
1lb of ground turkey
1/4 cup of French fried onions
Soy sauce
Sriracha
Garlic
Garam Masala (if you don’t have use some cinnamon, paprika, and cumin for an earth spiced component.)
1/2 onion, diced
One can tomato sauce
One can coconut milk
1 Roma tomato
~3 table spoons of massaman curry paste
Serve with cooked white rice

1. preheat oven to 375
2. season you turkey with garlic, sriracha, soy sauce, add crushed French fried onions as a binder- you can use what you have on hand but we like the flavor!
3. When oven is preheated, cook your meatballs for roughly 15 min.
4. While those are in the oven, you can cook your onions and diced tomato in the curry paste on medium-high heat. When onions are translucent, add the Masala, more garlic, (to taste of course), and tomato sauce.
5. You then let this simmer on medium to low heat while your meatballs finish. When meatballs finish add them to the pot or pan (I use a deep pan), and add your coconut milk. Let this finish up and cook until the sauce is think enough to really stick to the a wooden spoon.

Serve over rice! Serve with Naan! Garnish if you’d like! This is really customizable and one of our favorites!

This is a comfort meal for sure, but is also much better for you than you would think. Enjoy :)

Salmon tostadas

Easy Airfryer salmon tostadas

Makes 8 tostadas

Ingredients
2 salmon filets, descaled, skin on
1/4 cup Sour cream or Greek yogurt
1 Lime
Salt
Cholula
Queso Fresco
Cajun seasoning
1 cup Shredded cabbage
1 cup shredded carrot
2 avocados
Oil
1/2 diced onion

1. preheat airfryer to 400
2. While airfryer preheats you can add avocado and sour cream to blender with a squeeze of lime, salt, and Cholula to taste.
3. Season your fish with Cajun rub and oil
Add your fish to the fryer. Cook for 15min. Flipping halfway through. Then shred. Use the skin for garnish :)
4. Heat a skillet or grill and cook your tortillas in a light drizzle of oil til crispy.
5. Top the tostadas with fish, cabbage, carrot, avocado sauce, queso fresco, onion, and more hot sauce if desired. I like to break the salmon skin off as a crunchy component! Squeeze some more lime on top. You can serve with rice and beans or by it’s self!
