I grew up in a very small town on the Eastern side of Washington. We had a church, post office, two corner stores, diner, fire station, and an elementary school. In order to avoid boredom, I became an explorer, tapping into my creative side by cooking worms for dinner and mud pies for dessert. Until I could read and found my mother’s, “Joys of Cooking” book. It was over! My parents soon came home to flour covered counters and I could hear the screams, Destinie!! Well here we are decades later, cooking has evolved from worms to fried chicken, by the way is one of my most favorites. The mud pies, well they’re sweet potato pies now.

Seafood Ramen Boil

This makes 2 servings, double recipe for more

Recipe:
4tbsp butter
1/2 cup sweet onion
1/4 cup red bell pepper
1/4 cup green bell pepper
Up to 2 Tbsp minced garlic
Juice of one lemon
Tbsp white vinegar
Beef smoked sausage
Corn
Shrimp
Ramen noodles

Seafood boil seasonings:
1 tsp of the following:
Light brown sugar
Black pepper
Lemon pepper
Red pepper flakes
Cajun seasoning (Slap Ya Mama is what I used)
Paprika
Chili powder
Onion powder
Garlic powder
Parsley

Shrimp seasoning:
Onion powder
Garlic powder
Slap Ya Mama
Paprika
(Season to your liking; shake evenly over and mix)

Baked Mac n’ Cheese

1 lb Macaroni Shells
6 Tbsp butter or one stick
6 Tbsp flour or 1/3 cup and 1 Tsp
4 cups Sharp white cheddar
4 cups Mozzarella
4 cups Smoked Gouda
2 cup Medium cheddar
2 cup Colby Jack
8 oz or one brick cream cheese
Up to 2 cups Half & Half
Up to 2 cups Heavy Cream
(depending on the consistency desired of your cheese sauce)
2 Eggs
1/2 Tsp Cayenne Pepper
1/2 Tsp Smoked Paprika
2-4 Tsp Garlic Powder
2 Tsp Onion Powder
1/2- 1 Tsp Creole Seasoning

Sprinkle over macaroni noodles after adding the egg:
Salt and pepper
Creole Seasoning

Texas Style Chili 🌶

Chili:
1 1/2 - 2lbs of ground beef or turkey
5 strips of bacon or turkey bacon
3 garlic cloves, minced
1 large yellow onion
1 large green bell pepper
1 Tbsp ground cumin
1 Tbsp smoked paprika
1 Tbsp Better Than Bouillon (heaping)
2-3 Tbsp tomato paste
2 Tbsp chili powder
2 Tbsp masa
2 Tsp pepper
1 Tsp salt
1-2 Bay leaves
2 14-15 oz cans fire roasted diced tomatoes (a great option Rotel’s Fire Roasted diced tomatoes & green chilies)
15 oz can red kidney beans (rinse and drain)
15 oz can black beans (rinse and drain)
or
Dry beans:
1 lb bag red kidney beans
1 lb bag black beans
(using the quick soak or overnight method)

12 oz beer (Ale, Porter or Lager)
or
12 oz dry- full bodied red wine (Merlot, Cabernet Sauvignon)
1 cup water

Toppings:
Sour cream
Avocado
Red onions
Green onions
Cheddar cheese
For an extra kick 🔥🥵 Sliced Jalapeños

Cornmeal Waffles

1 cup all purpose flour
1 cup ground cornmeal
2 Tsp baking powder
1/2 Tsp salt
2 Tsp cayenne pepper
1/4 Tsp cumin
1 Tsp smoked paprika
1 Tsp hot sauce (your favorite)
1 cup of buttermilk
1/4 cup honey
4 Tbsp natural unsalted butter or unsalted
butter cream
(melted and cooled)
2 eggs separated
Up to a 1/2 cup milk (add until your create desired consistency)
(Fluff egg whites and fold in last)

Baked Candied Yams

3 lbs sweet potatoes
8 tbsp/ 1 stick salted butter
1 cup granulated sugar
1/4 cup brown sugar
1-2 Tsp cinnamon
1/2 Tsp ground nutmeg
1/4 Tsp ground clove
1/4 Tsp ginger
1/2 Tsp salt
1 Tbsp vanilla paste or pure vanilla extract

Sweet Potato Dump Cake

3 large sweet potatoes (2 to 2 1/2 lbs)
1/4 cup condensed milk
1 - 1 1/2 Tbsp of vanilla bean paste or pure vanilla extract (I use organic vanilla bean paste)

2 sticks butter:
1/2 stick in sweet potato batter
Remaining butter- Up to 1 1/2 on top of cake mix (I learned this the hard way~ Not enough and the cake will not form, too much and you have butter draining off of the edges)

1 1/2 Tbsp cinnamon
1 Tbsp nutmeg
1 Tsp ginger
Or
2 Tbsp and 1 1/2 Tsp Pumpkin Spice (which includes Cinnamon, nutmeg, cloves, allspice and ginger)
(Sugar measurements very based on your sweet tooth)
1/4 - 1/2 cup white sugar
1/4- 1/2 cup brown sugar
1 box of yellow super moist cake mix

Sweet Potato Stuffed Cinnamon Rolls w/ Browned Butter Cream Cheese Glaze and Toasted Pecans

Sweet Potato Filling:

2 1⁄2 pounds sweet potatoes 4 medium or 2 cups mashed 
4 tablespoons unsalted butter, room temp/ slightly melted
2 large eggs, room temp
1⁄2- 1 can sweet condensed milk (to desired consistency)
1 cup light brown sugar

1 Tsp cinnamon
1/4 Tsp ground nutmeg
1/4 Tsp ground ginger 
or
1 1/2 Tsp of Pumpkin Pie spice

1⁄2 teaspoon lemon extract
1 teaspoon vanilla paste or pure vanilla extract

1 can of Pillsbury Grands! Cinnamon Rolls with Cinnabon Cinnamon and Cream Cheese Icing

Browned Butter Cream Cheese Glaze:

4 tablespoons or 1/2 unsalted butter melted and chilled
1/4 cup or 2 oz cream cheese, at room temperature
1/4 cup packed light or dark brown sugar
1/2 teaspoon vanilla paste or pure vanilla extract
1 pinch or half an 1/8 tsp kosher salt
2 to 4 tablespoons whole milk, at room temperature (add in to desired consistency)

Toasted Pecans

1 cup Pecans
1 Tbsp of butter or olive oil
Salt
