I have always had a love for food, growing up Puerto Rican our dinners mainly consisted of rice beans and some kind of meat. I love me a good plate of rice and beans but I knew that I wanted diversity in the food I made once I began cooking for myself.
Having a diverse group of friends in college and beyond helped me explore different food and flavors. Good quality food genuinely just makes me happy.
Through the years I lost my way a bit, not really cooking with the passion I knew I had. I was more doing it as chore, everyone had to eat right?
I gained a lot of weight, I was very low in energy (despite the cups of espresso), I was exhausted, something had to change. As skeptical as I was I decided to give these steps my cousin raved about a try.
Day 1, I immediately felt the energy. Day 3, I decided to invest in myself. Day 10, my then 3 year old noticed the change in me, she said “mommy you happy now.” That’s when I knew I struck gold and there was no going back, I had to continue this journey for me, for her and my family. 60 days in, I was loosing the unwanted baby weight, had all day energy without the need for my (previous) daily cups of espresso. I was waking up before my alarm clock well rested, and even began to notice my hair skin and nails were growing at a fast rate. Most importantly my love for food and cooking was back!
I began exploring new recipes and meals again. My body began to tell me when I was eating “unhealthy” so I read more about the idea of food as medicine and now I incorporate that into my daily eating habits. I don’t always “eat healthy” but approximately 90% of my diet is eating clean. You may see a post or two of something deep fried or something sweet but those are rare. I’m human, I’m sharing my love for food with you which is mostly clean and not ultra processed.
