Hello & Welcome!
I’m going to start off with a brief story about what brought me here today.
Growing up, it was always a dream of mine to become a baker or chef. Most of my time was spent making cooking shows, using my mom’s old camcorder. In high school, my electives consisted of chefs and culinary. During my senior year I was diagnosed with Celiac Disease. I was devastated. There was nothing I loved more than fresh baked bread, pasta, cakes & pastries. Upset, I left that doctors appointment, went out to breakfast with my dad and had what I thought would be my last chocolate chip pancakes EVER (it actually took me 5 years after being diagnosed to go completely GF).
After my diagnosis, I started stocking up on GF food, not even knowing if I was going to like any of it. And of course, I didn’t.
Up until this point I didn’t have many symptoms, other than the occasional stomach ache. I figured “Hey, if I can get away with eating my favorite foods and only have to deal with a little stomach pain here and there, that’s totally worth it” & plus I didn’t have any symptoms at all during my pregnancies (later on down the road). I was able to eat gluten without having to deal with the consequences (so weird how pregnancy does that, right?).
It wasn’t until after having my daughter that I realized how bad my gluten allergy really was. It was effecting my stomach, my hair, my energy, my immune system etc. I finally decided I didn’t want to destroy my body any longer. I was going to go completely GF, and guess what? I DID. It was very hard at first but I did it and I am extremely proud of myself. I have been GF for a year now.
I spend a lot of my free time trying to find new recipes and snacks that taste delicious. Foods you would never even know were GF! I would love to share all of these delicious recipes with you!
