A little about me…

I love working out, spending time in my community and pouring into others. I always love leaving things and people better than I found them, it fills my cup!

I am a mom of four so if you’re looking for me I am probably on the go or at some sporting event. My husband travels for work so I understand how hard it can feel sometimes to “do it all.” I want to let all the moms know they are not alone. Follow along my crazy life to see how easy it can be to live a full life & stay on track with your goals.

I also deeply enjoy utilizing what I have learned while building my business, to help others build a business of their own and create time and financial flexibility.

My favorite snacks

Perfect for on the go

These are soo easy to prep in minutes or grab and go with them. I enjoy staying on track but I’m also very busy and always on the go. Having high protein snacks that take little to no work is what I am about.

Fiber filled

I genuinely enjoy snacking on raw veggies and fruits that are pre cut/ pre packaged. It’s soo easy to grab and go with them and my kids enjoy them also. Less time in the kitchen means more quality time with the little ones

Protein packed sweet tooth

One vanilla Greek yogurt add half a serving of wild berry beverage mix, mix together and top with your favorite granola. Simple & delicious!

Cookie dough protein

These are my favorite on the go protein bars, you can find them in every bag I own and my glove compartment.

Here are some of my favorite, simple meals that my whole family enjoys.

Caprese Sandwhich with Pesto

INGREDIENTS

Basil Pesto:
2 cups fresh basil
1/2 cup freshly grated parmesan
3 garlic cloves
1/4 cup pine nuts
1/2 olive oil
Sandwich:
1 medium tomato sliced 1/4 inch thick
8 slices mozzarella cheese 1/4 inch thick
4 ciabatta buns or bread of choice
balsamic glaze for drizzle
INSTRUCTIONS

In a food processor combine basil, parmesan, garlic, pine nuts and olive oil. Pulse until the olive oil looks emulsified and the pesto looks uniform.
To make the sandwiches: Slice the bread in half and spread pesto on one side. Layer the cheese and tomatoes and drizzle with balsamic glaze.

Broccoli Cauliflower Rice (add chicken of choice)

This addicting Broccoli Cauliflower Rice recipe requires only 4 ingredients and is so easy to make. Enjoy a low carb side dish that's ready in 20 minutes!
Course Side Dish
Prep Time 5 minutes
Cook Time 20 minutes
Total Time 25 minutes
Servings 4 people
Calories 116 kcal

Ingredients
1 large Cauliflower
1 small Broccoli
2 tablespoons Olive Oil
1 teaspoon Garlic powder
Salt + Pepper to taste

Instructions
Preheat oven to 350 degrees Fahrenheit
Cut the cauliflower and broccoli into small flowerets. Process them in a food processor until they're fine and resemble rice
Dump the mixture on a large cookie sheet. Season with salt, pepper and the olive oil. Mix and spread the cauliflower and broccoli on the sheet.
Bake for 10 minutes. Remove from oven and stir. Spread the mixture again and allow to bake for another 10 minutes. Repeat the above process until it begins to golden.

Taco salad

Brown 1 lb ground Turkey. After it’s cooked add 1 packet low sodium taco seasoning, 1 tbsp minced garlic, 1 cup salsa, 1 can diced tomatoes, 1 can drained corn, 1 can drained black beans and any additional seasoning of your choice for heat or flavor. It’s amazing over a spring mix lettuce and I enjoy scooping it with protein chips!

Serve with plain Greek yogurt and avocado. Add siracha for spice!
