A bit about me:: I’m a wife to an amazingly supportive and hard working man. He was my first and last tinder date 😀 I’m a momma to a wild and sweet little boy and the happiest little girl. We have 2 dogs that are spoiled as ever. 2 kitties and a fish that we have managed to keep alive. We are rooted in our faith and keep God very much alive in our house. I’m kinda crunchy, and live as toxic free as I can.

I have learned to love to cook and being in the kitchen (except the dishes 🤣). Having dinner as a family is one of the most important things to us and we love that time together. My newest adventure is caving to the sourdough craze!

I have a degree in Interior Design and worked in the industry for 4 years. When I was pregnant with our son, I was able to make my network marketing side gig, my full time job and become a stay at home mom when he was born! My passion is helping others feel confident, being healthier and showing people their potential, when they can’t see it themselves.

Some of my favorite and quick recipes!

Tomato soup: level up!

1 tbps oil
3-5 gloves of garlic, minced
1 tbps Calabrian peppers
2 cans tomato soup
2 cups chicken broth
2 cups heavy whipping cream
1 tbps basil

Saute garlic in oil. Add your Calabrian peppers. Then add the rest of your ingredients. Simmer together.

Cheeseburger Gnocchi

One pot! Enough said!

Fry gnocchi in butter, about 5 minutes. Remove. Brown ground beef and onion. Season. I used mustard powder, salt, pepper, cumin, paprika. Add garlic. Once browned, add can of Rotel (we use hot). Add 1 cup of of broth and the gnocchi back in and simmer until gnocchi is soft and most liquid has been absorbed. Add in 1/4 cup of heavy cream and 1/2 cup of cheddar cheese. Mix.

Top with 1/2 cup of cheddar cheese and broil!

Nashville Hot Chicken Sandwiches

I like to use either tenderloins or thin chicken breasts for this. I also Brine chicken with salt and pepper and let it sit in the fridge covered for 30 min or so. This chicken gets so crispy. So good. The best hot sauce to use for this is Tabasco.

Ingredients for frying chicken::
1/2 cup buttermilk
1 tbps hot sauce.
1 cup flour
1-1/2 tsp salt
Pepper

Add hot sauce to buttermilk. Add salt and pepper to flour. You can take a tablespoon or two of buttermilk mixture and add it to the flour to make some crumbles. Then dredge your chicken. Flour, then the buttermilk mix, back to flour. Fry in oil.

Sauce ingredients:
2 tsp brown sugar (don’t leave this out)
1 tsp cayenne
1/4 tsp chili powder
1/4 tsp paprika
1/2 tsp garlic powder
1/2 cup hot oil.

When you pull the chicken out of the oil, I place it on a cookie sheet and when it’s hot, baste in the sauce. For rolls we use brioche, and toast them. Bread and butter pickles. Coleslaw too!

Sun dried tomato ravioli

Cook ravioli of your liking.

Melt 2 tbps of butter in skillet. Add garlic and 2-3 tbps of chopped sun dried tomatoes, and 1 tsp Italian seasoning. Sauté for a few minutes. Add 1 cup 1/2 n 1/2, 1/4 cup water or pasta water, 1 tsp Dijon mustard. Bring to a simmer. Add spinach. I use 1/4 to 1/2 a bag of cooked chopped spinach. Add Parmesan cheese. I add until I get the consistency I want. Salt and pepper to taste.

Add ravioli to sauce. Top with bacon.

Crock pot chicken tacos

2 chicken breasts (mine were large)
Taco seasoning (I use hot and spicy)
Salt and pepper to taste
1 can diced tomatos and green chilies
1 can green chilis

Cook on high for 4 hours. Shred. And then add a small can salsa con queso 😍😍😍

Cheesy, chicken, rice and brocolli. Spanish style

Ingredients:
1 diced onion
1 diced bell pepper
2-3 diced jalapeños
Family size Spanish rice, cooked in chicken broth
1-2 tbps flour
1 cup chicken broth
2 cups heavy whipping cream
1 cup parm cheese
2 cups cheddar Jack
4 cups cooked, diced chicken
1-2 cooked brocolli heads. Cut tiny.
Seasonings:
1/2 packet Sazon
1 tsp Italian
1 tbps garlic
1 tsp Chicken boullion
Any other seasoning of your choice.

Cook rice. Poach and dice chicken. Sauté peppers
and onion in 2 tbps butter. Add seasonings. Cook until fragrant. Add flour to create a roux. Then add chicken broth and whipping cream. Add parm cheese and about 1/2 cup of cheddar Jack. Cook until gets a little thick. Add in the brocolli, chicken and rice. Pour into 9x13 pan. Bake for 15-20 min on 375.

Cajun Chicken Orzo

Ingredients
1 tsp butter and 1 tbps oil
1 diced onion
2 tbps sun dried tomatoes
Garlic
1 tbps Tomato paste
1 cup orzo
1 cup chicken broth (plus extra, or water)
2 cubed chicken breast
2 tbps Cajun seasoning
1 tsp salt
1/2 cup heavy cream
2 cups shredded spinach
1/2 cup grated parm

Season cubed chicken with Cajun seasoning and salt. In pan melt butter and oil. Add chicken. Cook through. Add onion, sun dried tomatoes, garlic, and tomato paste and cook for 5 minutes. Add orzo and chicken broth. Stir and simmer for 15 minutes. (Judge off the orzo). Keep an eye and add more water as needed so the pan isn’t dry. Add spinach and let wilt. Add heavy cream and cheese.

Cheesy bacon bbq chicken

Ingredients:
5-10 pieces of cooked bacon for crumbling.
One sliced sweet onion
Chicken breast (I used 2 and cut them in half. You don’t want the chicken too thick)
Cheddar cheese or cheese of choice
Spices for chicken:: 1/2 tsp of each. Pepper, salt, garlic powder, onion powder.
BBQ sauce of choice ( we prefer a spicy/tangy)

1. In greased 9x13 dish place sliced onion.
2. Mix seasonings for chicken, then season chicken on both sides.
3. Place chicken on top of onions.
4. Spread bbq on top of chicken. (I didn’t measure)
5. Top with cheese and bacon.
6. Bake covered @400 for 25 minutes. Remove cover and bake another 15-20.

Sweet potato muffins

Prep sweet potatoes ahead of time. You need about 3 cups of mashed. I used 3 large and had the perfect amount. Poke with a fork and bake at 400 for about 50 minutes. Until soft when poked. When they’ve cooled you can remove the skin easily.

Preheat oven to 325.
Mix 2 cups of flour, 2 tsp cinnamon, 1 tsp baking soda, 1/4 tsp baking powder, 1/2 tsp salt.
In a separate bowl mix wet ingredients. 1 cup sugar, 3/4 cup oil, 3 eggs, 1 tsp vanilla.
Combine wet and dry. Then add the mashed sweet potatoes.
Place info muffin tins. Bake for 30 minutes
Optional:: adding ground flaxseed on top. It’s actually really good!

Tik Tok Pasta

Brown beef. Add your fav spaghetti sauce and seasonings. In the meantime boil your pasta. (I used ziti) In a saucepan, melt 1/2 cup butter. Whisk in 1 tbps flour. Add 2 cups heavy whipping cream. Add 6oz bag of parmesan cheese. Whisk until thick. Mix cheese sauce into pasta. Pour pasta into a greased 9x13 pan. Top with meat sauce. Top with mozzarella. Bake for 20 min at 350.

Creamy pasta and Italian sausage soup

Brown ground sausage and 1 small diced onion.
Add garlic and 1/2 tsp red pepper flake. Sauté until fragrant. Add 4 cups chicken broth, 1 tsp Italian seasoning, 1 can petite diced tomatoes, pasta of choice(small pasta is so good in this!). Bring to a boil, reduce to simmer until pasta is al dente. Add 1/2 cup heavy cream, 4 oz warmed cream cheese, 1 cup parmesan cheese. Stir until combined.

Pesto Chicken Casserole

Season and poach chicken. About 1-1/2 pounds.
Cook 16 oz penne pasta.
In a bowl mix chicken, pasta, one jar Alfredo, one can diced tomatoes, 1/2 cup pesto, 1/2 cup milk, spinach according to your liking( I did a large chop of about 3 cups), 4 cups mozzarella.
Dump in greased 9x13 pan.
Mix 1/2 cup breadcrumbs, 1/2 cup shredded parmesan, 1 tbps oil.
Dump cheese mixture evenly on top.
Bake for 35 minutes.

Poppyseed chicken bake

Cooked rice
Cooked cubed chicken, about a pound
2 cans cream of chicken soup
1 cup sour cream
2-1/2 cups crushed ritz
1/2 cup melted butter
1 tbps poppy seed

Grease 9x13 pan. Layer rice. Then cooked chicken. Mix soup and sour cream then layer on chicken.

Mix butter, ritz and poppyseed. Layer on top of everything.

Cook for 20-25 min at 350.

Brown sugar baked oatmeal

3-1/4 cups old fashioned oats
1 cup packed brown sugar
2 tsp cinnamon
2 tsp baking powder
1/2 tsp salt
2 eggs
1-1/2 cups milk
1/3 cup melted butter
1tsp vanilla

Topping:
2 tbps brown sugar
2 tbps oats
1 tbps softened butter

Preheat oven to 350. Mix all together topping, put aside. Mix together all other ingredients. Place in 9x9 dish. Sprinkle topping on top. Bake for 40-45 minutes.

Mexican bean salad

1/2 cup finely chopped onion
1 cup finely chopped sweet peppers
1 can black beans rinsed
1 can corn
1/2 cup chopped cilantro

Whisk dressing separately:
1/4 cup like juice
1/2 cup oil
1 tsp cumin
1 tsp garlic
1/4 tsp salt
1/4 tsp chili powder
Dash of pepper or cayenne

Mix all together!

Cheesy Gnocchi Florentine

Pack of gnocchi
Hot sausage
1/2 chopped onion
1-1/2 tsp Italian seasoning
Garlic
Can Italian diced tomatoes w/ basil, oregano, garlic.
1 cup half and half
Mozzarella cheese
1/4-1/2 cup of broth

Brown sausage with onion. Add garlic and seasoning for a few minutes. Add tomatoes, half and half, and gnocchi. Bring to simmer for 8-10 minutes. If sauce is too thick add broth. I added it from the beginning.

Mix in cheese. Serve!

Stuffed Pepper and Rice Casserole

Ingredients
1/2 cup diced yellow and red bell peppers
Diced onion
One can diced tomatoes with chilis
Ground beef
1 cup rinsed long grain rice
1-1/2 cups broth
1tsp paprika, chili power.
1/2 tsp onion powder, salt and pepper.

Preheat oven to 400. Brown beef. Mix everything together in a 9x13 baking dish. Cover and cook for 45 minutes. Remove foil, add cheese to top and cook for another 10 minutes or until cheese is melted.

Everything Stuffed Chicken

Ingredients for garlic and herb cream cheese.
2-3 large spoonfuls of whipped cream cheese.
1/4 tsp of: oregano, parsley, basil, thyme, dill weed, salt.
1 tsp of garlic
1 tbps of butter. Softened.
Mix!

Ingredients for coating:
3tbps everything bagel seasoning
1 cup panko
2 tbps oil.
Mix!

1. Preheat oven to 375
2. Add 2 tbps of grated parmesan, 1/4 tsp garlic powder, 1/2 cup white cheddar cheese to cream cheese mix.
3. Butterfly your chicken breast. Put cream cheese inside. Season with salt and pepper.
4. Place 1/4 cup of flour in a dish. Beat one egg with a tbps of water in another dish.
5. Dredge chicken in flour, then egg. Then in your coating mixture.
6. Bake for 35-40 minutes.

Bacon cheeseburger bubble bake

Ingredients:
Ground beef
Medium onion, diced
One can condensed cheddar cheese soup
1/2 cup ketchup
2 tbps mustard
Salt and pepper to taste
1 tbps onion powder and garlic powder
Shredded cheese
1 can biscuits
Bacon

Spray 9x13 pan. Cut biscuits into 6ths and add to bottom of pan. Ground beef, add onion and cook until translucent. Add soup, mustard, ketchup, and seasonings. Add half of bacon bits. Transfer to 9x13. Top with rest of bacon and shredded cheese! Bake for 15-20 minutes at 375!

Sausage and potato soup

Ingredients:

1 pound spicy Italian sausage (can use mild)
5 tablespoons unsalted butter, divided
1 tablespoon olive oil
2 and 1/4 cups mirepoix: 3/4 cup diced carrots, 3/4 cup diced celery, 3/4 cup diced yellow onion
2 cloves garlic, minced
4 cups chopped baby gold potatoes
1 teaspoon EACH: dried basil, dried parsley flakes
4 cups chicken stock (or chicken broth)
1/4 cup + 2 tablespoons all-purpose flour
3 cups 1% milk
1/2 cup heavy cream
1 teaspoon salt and 1/2 teaspoon pepper
2 cups freshly grated Colby Jack or extra-sharp Cheddar cheese
Cayenne pepper to taste

Brown sausage and remove from pan to a paper towel lined plate. Heat 1 tbps of oil with 1 tbps of butter. Add veggies and sauté until onions are translucent. In a soup pot add cubed potatoes with basil, parsley, salt and pepper. Stir. Add veggies in. Add chicken broth. Bring to a boil for 15-20 minutes until potatoes are tender with a fork.

In the meantime, heat 4 tbps of butter until melted. Add flour to create your roux. Slowly whisk in milk. As it gets thick add your heavy cream and cayenne pepper. Remove from heat until your potatoes are done. Add into pot. Add cheese. Put sausage back in!

Crock pot Cheeseburger Soup

Ground beef
Diced medium onion
Garlic
1 cup grated carrots
6 cups chicken stock
1 tps basil
1-1/2 cups milk
16oz velvetta
2 cups macaroni

Brown beef. Add onions and garlic. Sautee until translucent. Put in crock pot. Add stock and carrots. Cook on high 5-1/2 hours. Add basil and noodles. Cook for 25 minutes. Add milk and cheese! Stir until melted!

Easy lasagna soup

Ground beef
Medium onion
5 cups chicken broth
One can petite diced tomatoes (14.5 oz)
One can crushed tomatoes (14.5 oz)
2 tablespoons tomato paste
1-3/4 tsp basil
3/4 tsp oregano
1/2 tsp rosemary
1/2 tsp thyme
Salt and pepper to taste
8 lasagna noodles broken into bite size pieces
Shredded mozzarella

Brown beef. Add medium onion and garlic. After the onion is translucent, add all ingredients except for noodles and cheese. Bring to a boil. Simmer for about 10 minutes. Add noodles until cooked, about 10 minutes. Top with cheese in bowls!

Taco Pasta

Brown beef. Add diced onion and cook until translucent. Add taco seasoning. Then add corn, diced green pepper, 4 cups chicken broth, 12oz pasta, salt and pepper. Reduce to simmer. Stirring frequently. Until pasta is done and liquid is mostly cooked off. Add Mexican cheese (I don’t measure but about 1 cup or more 😬). Stir and enjoy! We topped ours with sour cream. Delish!

Bacon beer cheese bbq

Cook and crumble about 6 pieces of bacon. Cook more bacon (don’t crumble, you’ll use it as a topping). In the bacon fat sautée diced medium onion. Brown beef. Add onion. Add 1 tbps of Worcestershire sauce. 2 tbps Dijon mustard. 1/4 cup ketchup. 1/2 cup beef broth. 1 cup beer. Bring to a boil and simmer down. When most of the liquid has cooked off, add crumbled bacon. Top of cheddar cheese. I use a block and cut it up! Serve with brioche buns! We usually toast them! Enjoy!

Cajun shrimp and sausage pasta

For this recipe I made the Cajun seasoning instead of using store bought.

For the cajun seasoning:
2 teaspoons smoked paprika
1 teaspoon oregano
1 teaspoon dried thyme
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin
1/4 teaspoon black pepper
1/2 teaspoon salt

Make seasoning. In Dutch oven or pot heat 2 tbps of oil. Add medium diced onion with sliced keilbasa, until onions are translucent. Add garlic and half the seasoning mix.

Add 1 can fire roasted diced tomatoes (don’t drain). Add 2-1/4 cups beef broth. Add 12 oz fettuccine. Stir so the pasta is covered. Cover and bring to a boil. Once boiling simmer for about 12 minutes. You’ll want to stir frequently to keep the noodles from sticking.

Toss thawed, deveined, peeled shrimp in remaining seasoning. Add them to the pot with 1/2 cup heavy whipping cream. Cook until shrimp are opaque. 3-5 minutes. Serve!

30 minute beef stroganoff

Heat a tablespoon of oil in skillet. Brown beef. Add diced medium onion and garlic. Season beef. My favorite is Mrs.Dash garlic and herb. Mix in 2 tablespoons of flour. When mixed, add 1 cup beef broth, 1 cup whipping cream. 1 tablespoon Worcestershire sauce, Salt and pepper. Bring to a small boil, simmer.

Serve over noodles or rice!

Honey mustard chicken with air fryer potatoes

4 chicken breasts
1 teaspoon (or to taste) chicken seasoning blend
1-1/2 tablespoons olive oil, divided
1/4 cup honey
1 tablespoon dijon mustard
1 tablespoon yellow mustard
1 tablespoon wholegrain mustard
1/2 teaspoon white vinegar
1/8 teaspoon paprika
4 sprigs fresh rosemary, optional but recommended

Preheat oven to 375. Heat 1tbsp of oil, brown each side of chicken in skillet and season. Move to greased 9x13 pan. Pour honey mustard sauce over chicken. Bake covered for 20 min. Remove foil and bake for another 15.

Honey mustard sauce: 1/2 tbps oil, vinegar, all mustards, honey and paprika. Whisk.

Chicken seasoning:
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1/2 teaspoon smoked or sweet paprika
1/8 teaspoon cayenne pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon dried parsley

Potatoes: large dice potatoes. Season with oil, garlic powder and salt. Air dry 400 degrees for 10 min, shake up, another 10!

Korean beef bowls

Brown ground beef. While it is cooking make your sauce. 1/4 cup packed brown sugar, 1/4 cup soy sauce, 2tsp sesame oil, 1/4tsp ground ginger, 3 garlic gloves(but who measures garlic), 1/2 tsp red pepper flake. Mix.
Make white rice.
When meat is browned, add your sauce.
I also add broccoli. Microwaved!

Jalopeno Crunchy Onion Chicken Nuggets

3 cups French’s crispy onions, crushed
1-1/2 cups French’s crispy jalopenos, crushed
Chicken breast cubed
Flour
2 eggs lightly whisked

Preheat oven to 350. You’ll need two aluminum foil lined pans. I also sprayed. Cube chicken. Coat in flour, coat in egg and then coat in the onion/jalopeno mix! Bake for 15-20 minutes!
