Hey guys! I’m Lauren. I love coffee and hanging with my dog, Mylo “the good boy”. Living in Colorado means adventures around each corner. But here’s my story:

Grew up in Chicago suburbs. Moved to Kansas for school in 2014. Rock chalk Jayhawk. In 2019, I graduated from Grad School, moved to Colorado, started a new job, and got engaged to my best friend and forever love!

In 2020, pandemic hit. Covid-19 and memes spread. Anxiety and depression circled around the world. Unknowns were everywhere. For my job, my students, my wedding, and life. However, we found light in the dark. With the huge wedding plans postponed, we decided to elope with close friends and family in October. We decided to move to a new city in Colorado.

And most of all, we constantly choose happiness and kindness. It’s not easy or natural, but definitely essential. Asking others to be kind, hopeful, and positive too!

French Press Coffee

#1 Heat 24 oz of water in a kettle to boiling.
#2 grind your beans to a very coarse grind.
#3 Add the 6 tbs of beans to the bottom of a French press.
#4 Pour enough hot water in the French press to wet the beans. Make sure all beans are evenly saturated with the water. Wait exactly 1 minute.
#5 Pour in the remainder of the water, then give the coffee yet another quick stir. Cover with a lid and wait 3 minutes.
#6 Gently press down the plunger until it is nice and tight on the bottom.

Pumpkin Cream Cold Brew

Starbucks copycat. How to make this DIY pumpkin cream cold brew iced coffee:

#1 Make your iced coffee. Whether that’s cold brew, iced pour-over, nitro coffee, or just normal filter coffee (make an extra-strong batch and ice it down) — the coffee that forms the base of this drink is entirely up to you.

#2 Make the pumpkin foam. I simply added the half and half, sweetener (maple syrup), vanilla, pumpkin spice and salt to a measuring cup. Then used a milk frother to froth the milk until it reached a tight whipped-cream-like foam consistency.

#3 Assemble the drink. Pour the iced coffee over lots of ice, then spoon however much pumpkin foam you would like on top. Sprinkle with a pinch of extra pumpkin pie spice or ground cinnamon. Then serve and enjoy!

1 cup almond milk
1/2 cup orange juice

1 cup frozen blueberries
