Date Slice
INGREDIENTS
- 250g dates, pitted & chopped
- 250g butter (preferably salted)
- 1 cup sugar
- 1 packet of digestive biscuits (~400g)
- 1 egg, beaten
- 1 tsp vanilla essence/extract
- Desiccated coconut
- Pinch of salt (optional)
METHOD
1. In a saucepan, mix the dates, butter and sugar. Boil for about 5 minutes. Remove from heat and cool slightly.
2. Stir through the egg and the vanilla essence. Work quickly! If not, you will have bits of cooked egg.
3. In a big bowl, roughly break the biscuits. Add the date mixture into the biscuits. Mix thoroughly.
4. Greased/lined a flat pan and sprinkle coconut. Put in the mixture. Flatten it slightly and sprinkle more coconut on top.
5. Refrigerate overnight. Cut into squares before serving.
