Homemade Blueberry Pancakes
Ingredients:
1 1/2 cup, spelt flour
1/3 cup coconut flour
2 tsps. baking powder
1/2 tsp. baking soda
1 tbsp. stevia
1/4 cinnamon
1/8 tsp. salt
1/4 cup full fat yogurt
3/4 cup of almond milk
2 large eggs
Add wet ingredients into the flour mixture, mix lightly until well combined. Pour 1/4 cup of the batter into the pan, and cook on low-medium heat for about a minute then flip it the pancake, then let it cook for another minute or until it’s lightly brown.
Served and enjoy them with butter and pancake syrup.
Quinoa and Kale salad
I decided to opt the near fir today, and still wanted to make sure I get all my protein from this plant base salad.
This is a delicious, healthy, protein-packed salad.
Ingredients:
1 - corn off the cob
1 cup quinoa
Boil together until it’s cooked.
Minced:
1/2 cup, Red cabbage
1 med. size red sweet pepper, minced
1/2 cup tomatoes, halved
2 cups of shredded green kale
Dressing:
2 tbsp. Yellow mustard
1 tsp. Maple syrup
1/4 cup fresh squeezed lemon juice
1/3 cup olive oil
Sal and pepper for taste
Add dressing to the veggies, mix well and enjoy.
