MEET MADS

Hi everyone! My names Mads and I’m so glad you found me! I’ve been on a journey to help heal my body through nutrition and fitness for a few years. My life has had it’s ups and downs from since 2018, but strengthening my body and eating healthy foods have helped me manage my symptoms.

Since 2018 I’ve been to countless doctors trying to help diagnose my autoimmune disease, had surgery to remove a tumor on my ovary that was a size of a pineapple, and have had chronic back pain. I’m still learning and trying to heal my body, but if you find your self in this same situation, let’s talk and try to heal together! Come on this journey with me of becoming active and healthy!

APRIL 2021 MEAL FAVS

My favorite meals from this month

BREAKFAST

The most important meal of the day! Usually I like to grab something quick and easy for breakfast and head out the door. So, it might not seem like much, but this is my favorite breakfast option for the month of April 2021.
Recipe Deets:
•Oikos Triple Zero Greek Yogurt-
-My fav flavor is coconut!
-I love all the Oikos yogurt flavors though, so any flavor would do!
•Built Bar-
-With coconut yogurt I’ve liked the sea salt caramel flavor so far with it. It tastes like a straight up Milkyway candy bar!
-I just discovered built bars and love them! They’re great as snacks or to add to meals like yogurt bowls!

LUNCH

Chicken Salad! I love it so much!
Recipe Deets:
•Rotisserie shredded chicken from deli.
•Light Mayo
•Trader Joe’s slivered honey roasted almonds.
•Red Grapes.
•Shredded Cheddar Cheese.
•Salt and Pepper.

I usually pair this with some fruit like strawberries, pears, or peaches as a side item.

DINNER

KFC Mashed Potato Bowl! I’ve loved this meal from KFC since I was a little kid, and decided to put a healthier spin on it and it was chef’s kiss SO GOOD!

Recipe Deets:
•5 mini potatoes
•Bag of frozen cauliflower
•2 tablespoon of butter
•Black pepper
•Can of whole kernel corn
•Gluten free chicken tenders
•Gluten free brown gravy mix
•Shredded cheddar cheese

DESSERT

Easter was upon us so I made my Grandma’s famous carrot cake and turned it into a gluten free healthier version!

Recipe Deets:
Cake:
2 cups grated carrots
2 cups swerve brown sugar
Coconut oil
Vegetable oil
1/2 cup of honey
4 eggs
Almond milk
1/2 cup coconut flour
1 cup Almond flour
2 tsp baking soda
2 tsp baking powder
1/2 tsp salt
2 teaspoons cinnamon
Tsp of Xanthan gum

Frosting
Whipped cream cheese
Almond milk
Swerve confectioners sugar
