Our Favourite Summer Glass

Virgin Mojito

Makes 2

Ingredients

1 small lemongrass stalk

1 tbsp mint leaves, plus extra to serve

2 tbsp lime juice

1 ½ cups crushed ice

250 ml ginger beer, chilled

Method

1. Peel away tough outer leaves from lemongrass. Trim base. Cut stalk in half lengthways. With the flat side of a large knife, press on the white part of the stalk to bruise it.
2. Place in glasses with mint. Combine juice and ginger beer and divide between glasses
3, Just before serving, divide crushed ice between glasses.. Garnish with extra mint leaves.

Haloumi and Corn Fritters Recipe

Ingredients
1 cup gluten free self-raising flour, sifted
2 free range eggs, lightly beaten
1/2 cup soda water, chilled
100g haloumi, coarsely grated
3 spring onions, thinly sliced (plus extra to serve)
1/4 cup continental parsley, leaves chopped
2 cup sweet corn kernels
1/3 cup vegetable oil
Salt and pepper to season
Tomato relish (to serve)

Method
1. Whisk flour, egg and soda water in a large bowl until smooth and combined. Stand for 10 minutes.
2. Fold in haloumi, onion, parsley and corn. Salt and pepper to season
3. Heat oil in a large, deep frying pan over medium-high heat. Place 4 x 1/4 cups mixture in pan. Cook for 4 minutes on each side or until golden and cooked through. Transfer to a wire rack set over a baking tray. Repeat with remaining batter, adding more oil, if necessary.
4. Serve fritters with extra onion and relish.

I’ll be blunt if it’s not a f*%k yes, then it’s a no.

There is no perfect person but I do believe there is someone perfect for each person. Find someone who above all else is kind and makes you laugh. As time goes by other things may fade, but someone who has kind intentions and can make you laugh will always make your heart happy.

The truth is it takes work, it takes communication and it takes patience but wouldn’t you prefer to have those conversations with someone kind and funny?

Take your time, I promise your person is coming. I know that’s easy to say coming from someone very much in love. But I can assure you, I was very lost until I was found and it turns out we were exactly what we were both looking for.
