MOST TASTED at THE BAR

MYANMAR

Origin:

Amayar Black Honey 2022 Harvest
Shan State, Myanmar
Notes of Luo Han Guo sweetness, kumquat and dried longans.

Produced by the Ms Su Su Aung and her team at Amayar Women Coffee Producer Group, they have aimed to provide an alternative employment choice for women in Shan State to be able to support themselves through producing coffee.

Su Su Aung prides herself on offering 10% of her profits to community efforts that include pre/post-natal training for young mothers, and food safety courses for families. She is also very generous with advice and support to coffee farmers. This was when we first visited the coffee farms in Myanmar and got to know about about Myanmar's Specialty Coffee range.

LAOS

Origin:

Fai Mai
Bolavens Plateau, Laos
Natural Process, Geisha

Notes of Citrus, floral and summer fruits.

The Bolavens Plateau in South Laos is the most favorable region for coffee cultivation in the country. The region boasts high elevations (up to 1350 masl), rich volcanic soils, and a moderate climate with plentiful sunshine, rainfall and a low risk of frost.

The gentle slopes of the plateau negate many of the farming challenges posed by more mountainous and varies terrain.

Strict ripe cherries are harvested and washed. Subsequently the cherries are laid out in a greenhouse and dried till they are ready to be exported. Drying time can take up to 20-25 days depending on weather.

This coffee is also known as Fai Mai, referring to Fire Mountain, which is the nearby volcano where these coffees are grown.

YUNNAN, CHINA

Origin:

Tiansheng Bridge, Pu’er, Yunnan
Roast: Filter Roast
Cupping Flavour: Winey, Red Berries, Citrus

A subtropical low-heat valley grown. The average elevation is around 1400MASL.
The farm owners believed China could also produce great coffee beans for coffee lovers and drinkers. In 2016, they worked closely with the specialty coffee industry and took over the coffee plantation management from local farmers, and reformulated the soil before planting new coffee trees. They also planted shade trees such as peach trees, orange trees, and macadamia trees to increase the quality of coffee. In particular, during the 6th Yunnan Green Coffee Competition in 2021, this micro-batch won 5th place in the natural process category out of hundreds of other entries.

What it is? —

Natural wine refers to a generalized movement among winemakers for production of wine using simple or traditional methods. Although there is no uniform definition of natural wine, it is usually produced without the use of pesticides or herbicides and with few or no additives. Typically, natural wine is produced on a small scale using traditional rather than industrial techniques and fermented with native yeast. In its purest form, natural wine is simply unadulterated fermented grape juice with no additives in the winemaking process. Other terms for the product include low-intervention wine, raw wine, and naked wine.
