Jerk sweet potato and black bean curry

This recipe from BBC Good Food is delicious! The prep doesn’t take too long and then you can just leave it on the hob to work its magic.

I recommend leaving the curry on the hob for around an hour instead of cooking it and reheating again. This ensures you get great flavours and soft sweet potato, without too much hassle!
